2013 Thompson Estate Cabernet Sauvignon

Deep crimson red with a slight purple edge. A complex display of rich chocolate, mocha, dark cherry and black currant characters upfront, subtle sweet cinnamon oak spice and savoury dried herbs adds an extra depth of intricacy. Medium to full bodied wine with elegant, well integrated fruit flavours fill the palate followed by a succulent, fleshy but firm tannin structure. Juicy red berry fruit flavours persist endlessly with a hint of dark chocolate on the finish.
The fruit was gently machine harvested and processed into red fermenters where they are tenderly pumped over 3 times a day during fermentation to maximize colour extraction. When fermentation was complete, the wine was left on skins for an additional 7 days to develop some extra complexity before being transferred to a selection of fine French barriques and matured for 18 months.
